SPICY PLUM KETCHUP CHICKEN SLIDERS (no cooking required) Recipe courtesy of Chef Sonja Edridge

Serves: 6

Prep Time: 15 min

Ingredients:


1 free range Rotisserie chicken
1/2 cup Plum chilli ketcup
6 slider buns

2 avocado’s, crushed

SLAW
½ red cabbage

2 large carrots, grated

1 small apple, grated

3 tbsp mayonnaise

1 tbsp apple cider vinegar or lemon juice

Directions:

1. Shred 2 cups of chicken of the rotisserie chicken, pulling it apart with 2 forks in a medium bowl. Mix in plum chilli ketchup and season with salt & pepper as needed. Set aside.

2. Mix the slaw In a medium bowl, with the mayo & vinegar and season season as needed. Set aside.

3. Cut slider buns in half, top bottom half with avo crush, top with  spicy pulled chicken, with cole slaw. Serve with extra plum ketchup if needed

4. Cover with the top bun and enjoy!
